Broiled Zucchini Slices
 recipe from Better Homes and Gardens

 

Ingredients:

 

·        2 cloves garlic, minced

·        2 tablesp olive oil or butter

·        ½ tsp dried rosemary

·        ½ tsp black pepper

·        1/8 tsp salt

 

·        2 medium (or 3 small) zucchini and/or yellow summer squash, cut lengthwise into ¼ inch-thick slices

 

Directions*

1.     In a small saucepan, over medium heat, cook garlic in oil for 30 seconds.

2.     Stir in rosemary, pepper and salt.

3.     Drizzle mixture over zucchini, toss to coat.

4.     Arrange zucchini in a single layer in a 15x10x1 inch backing pan.

5.     Broil about 5 inches from heat for 5-6 minutes or till tender, turning once.

 

*Much Easier Method: 
Stir-fry everything together until zucchini is crisp-tender.
