German Hot Potato Salad
adapted from a recipe from Cinda Motter
Ingredients:
· 6 Medium potatoes, cut into bite-sized cubes
· ˝ a u-shaped sausage
· 1 onion, chopped
· 3 teasp. Sugar
· 3 teasp. Salt
· 1 1/2 teasp. flour/cornflour
· 1/4 teasp. black pepper
· 4 Tablesp. Red wine vinegar (or balsamic vinegar)
· 3/4 cup water
· minced parsley for garnish
Directions:
1. Boil potatoes until tender; drain.
2. Cut sausages into bite-sized pieces. Sauté in pan, remove. (Add them to the potatoes when the potatoes are done and drained)
3. In the skillet, sauté onions until tender
4. Add sugar, salt, flour, & pepper to the onions. Stir.
5. Add water and vinegar. Cook, stirring often, until mixture is slightly thickened & boiling.
6. Pour mixture over the potatoes and sausages. Stir gently over low heat until mixed. Add parsley.
