Ham and Lentil Soup

Ingredients:

 

·        1 cup dry lentils

·        5 cups water

·        1 medium onion, chopped

·        1 cup chopped celery

·        1 cup sliced carrot

·        1 rounded tsp instant chicken boullion granules (or 1 cube)

·        1 tsp minced garlic

·        ½ tsp finely shredded lemon peel

·        1/8 tsp ground red pepper

 

·        1 cup cubed cooked ham

 

·        2 cups chopped fresh spinach

 

 

Directions

1.     Rinse and drain lentils. 

2.     Combine first group of ingredients in crock pot.  Cook on low for 7-8 hours or high for 3 ½ to 4 hours.

3.     Add ham at the very end, cook until warmed up.

4.     To each individual bowl, add a handful of fresh spinach and ladle soup on top.  Stir.  The hot soup will cause the spinach to wilt and shrink.
