Lemon Bars
recipe from Better Homes and Gardens
Ingredients:
· 1/3 cup butter (5 tbls)
· ¼ cup sugar
· 1 cup flour
· 2 eggs
· ¾ cup sugar
· 2 tbls flour
· 2 tsp finely shredded lemon peel
· 3 tbls lemon juice
· ¼ tsp baking powder
· powdered sugar
Directions
1. In medium mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.
2. Add the ¼ cup sugar, beat till combined.
3. Beat in the 1 cup flour till crumbly.
4. Press the mixture into the bottom of an ungreased 8x8x2 inch baking pan.
5. Bake at 350 for 15-18 minutes or just till golden.
Meanwhile, for filling:
6. In a small mixing bowl combine eggs, the ¾ cup sugar, the 2 tbls flour, lemon peel, lemon juice and baking powder.
7. Beat 2 minutes or till combined.
8. Pour filling over baked layer.
9. Bake 20 minutes more or till lightly browned around edges and center is set.
10. Cool. Sift powdered sugar over top. Cut into bars.
