Sera’s Spaghetti Sauce
Modified from The Peace Corps Namibia Cook Book
Ingredients:
· Pasta noodles (1 package 16 oz regular spaghetti or slightly less)
· ½ to 1lb ground beef (or make meatballs, or go meatless)
· 1 onion, chopped
· 1 tbls minced garlic
· 14.5 oz. can of diced tomatoes (can be Italian flavored)
· 8 oz. can of tomato sauce
· 6 oz. can tomato paste
· 1 tbls wine (optional)
· 1 tbls honey
· 2 tsp basil
· 1 tsp oregano
· 1 tsp thyme
· 1 tsp salt
· ¼ tsp black pepper
· 1/8 tsp crushed red pepper (optional)
optional additions:
· chopped or sliced black olives, 1 package cooked and drained spinach, chopped green bell pepper
Directions make in a deep saucepan
1. Start a large pot of water boiling. Pasta noodles can be cooking while you make the sauce.
2. brown ground beef; remove from pot
3. in the beef drippings, sauté onions and garlic
4. add the rest of the ingredients
5. grind up to make a smooth sauce (hand held blender is best, but you can put it in a blender)
6. Add ground beef back into the smooth sauce, simmer until noodles are ready.
