Spicy Potato Wedges

Ingredients:

·        ¼ cup vegetable oil

·        1 tbls chili powder

·        2 tsp onion powder

·        2 tsp garlic salt

·        1 tsp sugar

·        1 tsp paprika

·        ¾ tsp salt

·        ¼ tsp cayenne pepper

 

·        3 ½ lbs potatoes, cut into wedges (long strips)

Thai Chicken Fettuccini

Ingredients:

 

·        8 ounces uncooked fettuccini

 

·        ¾ lb chicken breast, cut into strips

·        1 tbls oil

 

·        1 medium sweet red pepper, julienned

 

·        Sauce:

·        1 cup salsa

·        ¼ cup creamy peanut butter

·        2 tbls orange juice

·        2 tbls honey

·        1 tsp soy sauce

 

·        ¼ cup minced fresh cilantro

 

 

Directions:

1.     Cook fettuccini according to package directions

2.     Cook chicken in oil over medium heat until browned.

3.     Add red pepper, cook and stir until crisp-tender.

4.     For sauce, combine ingredients and microwave on high for 1 minute.

5.     Pour sauce over chicken.

6.     When the fettuccini is done, combine with the sauce and chicken.

7.     Top with cilantro, stir and serve.
